Taste the Changing Safety

The dessert is the data. Taste the Changing Safety translates the transformation of one Afghan province, Herat, into something you can eat, and then into a drawing of how it tastes. Guests finish an Afghan saffron-honey gelato themselves: they pour a drought-hardy dryland-fruit syrup and scatter a seed blend by hand, sowing the future the sterile crocus cannot make for itself. Saffron survives only because women’s hands keep it alive.

The print braids the same story across twenty-five years, read from top to bottom, a fuller strand marking a higher value. The left braid, Red Gold, the trade nickname for saffron, plaits Afghanistan’s opium poppy (mauve-pink) against Herat saffron (gold): poppy swells through the 2010s, then collapses at the 2022 ban as saffron overtakes it. The right braid, Her Two Freedoms, plaits women’s saffron livelihood (violet) against girls’ schooling (teal): livelihood climbs while learning is cut when secondary school is banned in 2022, and the work moves indoors. Every strand carries verified data on labor, safety, and survival.

Below the braids sits the recipe itself, drawn as nested parts, largest frame outward: gelato base (85 percent), mulberry syrup (12 percent), seed blend (2 percent), and a grain of sea salt at the centre. Each frame is carved into area-true taste bands ruled by sweetness (38 percent) and cream-fat (36 percent), with saffron’s umami beneath.

Edible installation: saffron-honey gelato (saffron, wildflower honey, whole milk, heavy cream, green cardamom, sea salt); pour-your-own syrup of dried mulberry, raisin, or date; seed blend of white sesame, nigella, melon seed, slivered pistachio, coriander, green cardamom, and saffron sugar.
